Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, whisk together the egg and chicken broth until smooth.
  3. Add the flour in two separate additions, whisking thoroughly after each, until the batter reaches a smooth, pourable cake-batter consistency.
  4. Whisk in the beet juice until fully incorporated and evenly tinted.
  5. Transfer the batter to a plastic bag and snip off one corner to create a small piping opening.
  6. Line a baking sheet with parchment paper or a nonstick baking mat. For consistent sizing, use a macaron mat as a guide — pipe 16 circles of batter, each about 1.5 inches in diameter.
  7. Bake for 5 minutes, or until the cookies are dry to the touch and develop a subtle sheen.
  8. Let cool completely before assembling — warm cookies will melt the filling.
  9. Once cooled, spread about ½ teaspoon of peanut butter onto the flat side of one cookie, then gently press another cookie on top to form a sandwich. Repeat with remaining cookies.
  10. If your peanut butter is too runny, stir in 1–2 teaspoons of flour to achieve a spreadable, stable consistency.
